Pittsburgh is losing. The incidence of diabetes is higher here compared to the national average and the number of Pittsburghers living with diabetes will increase by 73,000 in less than 15 years. This November, the American Diabetes Association celebrates National Diabetes Month and we’re inviting you to be a part of it by sharing the event details of the ADA Pittsburgh EXPO with your readers.

The EXPO is FREE and includes health screenings, cooking demonstrations, product and service exhibitors, as well as leading experts talking about diabetes management and prevention. Pittsburgh residents can get the latest information on preventing and managing diabetes and its deadly complications to help keep their family healthy.

Arugula Pesto

Arugula pesto is a great summer dish. It can be served on grilled veggies, fresh fish or poultry. Its spicy characteristics make it much different from tradition basil pesto.

Serves 4-6

Ingredients:

6-8 cups fresh baby arugula

1 cup raw pine nuts

1 clove garlic

½ cup extra virgin olive oil

½ cup fresh parmesan cheese

2 tablespoon lemon juice

½ teaspoon salt

1 teaspoon fresh cracked black pepper

Directions:

Place ingredients in food processor and blend until incorporated and smooth.

World’s Best Chocolate Chip Cookies!

Serves 6-8

Ingredients:

1 cup granulated sugar

1 cup packed light brown sugar

1 cup salted butter

1 teaspoon vanilla extract

2 large eggs

2 ½ cup unbleached flour

1 teaspoon baking soda

1 teaspoon salt

2 cups or 12 ounces semi-sweet chocolate chips

Directions:

Pre-heat your oven to 375 degrees.

Cream the sugars, butter, and vanilla extract. Add the eggs to the sugar mixture, and blend until incorporated.

Mix together the flour, salt, and baking soda, and add to the wet mixture slowly.

Add the chocolate chips.

Bake on a lined cookie sheet for 12 minutes until the edges are brown.
