Are you confused at what to look for when choosing fresh fish? Well, here are a few simple rules to follow.
If buying a whole fish, look at the general appearance. Make sure there are no tears, marks, spots, or patches of missing scales. Next, take a look at the eyes- they should be clear and not muddled. Ask the person behind the counter to lift the gills so that you can see them; they should be bright red, not orange or opaque. Last, and most important, ask to smell the fish. If the fish has a strong smell don’t purchase it. The scent of a fresh fish is absent, or sweet smelling.
