I can remember my chef-instructor yelling that phrase at our class every day while in the sauces kitchen in cooking school.

“These sauces are of the utmost importance, and you will use them continually throughout your careers. They are also the foundation from which all other sauces are made…”

He was right. In order to be a chef, or even a great cook, it’s essential to learn how to make the five Mother Sauces. They’re not difficult to prepare, but they do require practice. One you master, or even get proficient at making the five mother sauces, you can literally create thousands of exquisite dishes.

Let’s take a look at the five Mother Sauces.

They are:

Tomato

Béchamel

Veloute

Hollandaise

Demi-Glace

*Tomato Sauce

We’ve all had tomato sauce before, right? Tomato sauces are used primarily for pasta, but can also be served on meats, poultry, fresh fish and veggie dishes.

Here is a basic tomato sauce recipe:

This is a lot of complicated information. Try making one of these sauces a week until you get comfortable with the procedure, ingredients, and end product. Don’t get discouraged if your sauces don’t turn out perfectly the first time; keep practicing.

If you’re a regular reader of Pittsburgh Hot Plate, you probably know by now that I have a fondness for baked goods. Luckily, there are quite a few bakeries in and around the city, all of whom seem to have their own specialties. That being said, all pastries are not created equally. Quality ingredients, along with sound and consistent technique determine true pastry-excellence.

I recently had the chance to try some pastries from a bakery in Squirrel Hill run by a Mother/Daughter team by the name of The Cake and Cookie Spot. The large cookies from The Cake and Cookie Spot are visually stunning. Glossy ribbons of beautifully tempered, silky-smooth chocolate enrobed many of my cookie-samples. Other pastries on my tray were loaded with roasted nuts, mini M&Ms, and colorful sprinkles… no skimping on the good stuff here!

The cookies were deliciously moist, and flavorful. The Ultimate Chocolate Chip Cookie was packed with chunks of delectable chocolate- at least 50 mini candy-coated bits adorned the Ultimate M&M cookie. The Ultimate Peanut Butter was one of my favorites, as was the Double Chocolate Oatmeal Raisin. Other choices include Classic Peanut Butter, Classic Chocolate Chip, Oatmeal Raisin, Sprinkle, Thumbprint, Turtle, Regular M&M, and Oatmeal Butterscotch. If you’re a cookie fan, chances are The Cookie and Cake Spot will have your favorite.

One of the more interesting items for purchase at The Cake and Cookie Spot are Cake Shots. What are cake shots? Well, imagine your favorite center-cut piece of cake served in a small plastic vessel with plenty of gooey icing and scrumptious toppings. These cake shots fit perfectly in your hand, and can easily be eaten on-the-go with no napkins! A small spoon fits perfectly inside the cake-filled cylinders… just make sure to get EVERY bit of the moist, delicious cake. My favorite was the Red-Velvet; a hint of cocoa and sweet icing made my taste buds jump for joy. Other choices include Café Mocha, Reese’s, Boston Cream, and Double Chocolate.

I really like bagels. My favorites are whole wheat bagels (untoasted) with gobs of cream cheese, fresh garden tomatoes, red onions and smoked salmon.

I’ve had the opportunity to eat at the Bagel Factory in Squirrel Hill many times. Recently, I had a big catering job, and had to pre-order several dozen bagels for a morning brunch. I called the day before, and ordered some plain, whole wheat, and a few other varieties. When I approached the counter at 6am on Saturday for my order, the clerk smiled and gave me four large bags filled with warm bagels. Everything was ready- all I had to do was pay, and leave. On my way to my event I grabbed a bagel from the bag and took a bite- it was wonderfully fresh, and tasty. The dough was soft, and each bite thereafter was equally enjoyable. My clients also enjoyed the bagels, many commenting on how fresh they were.

Besides selling bagels, The Bagel Factory has breakfast and lunch items. During the summer you can have breakfast outside, and watch all the people walk by on Forbes Avenue. If you’re still hungry after breakfast or lunch, grab a Ben and Jerry’s cone to go!
