Lemon Honey Vinaigrette.
If you like tangy, flavorful dressings give this a try. It’s easy to make and goes well with any type of lettuce, nuts, and ripe, flavorful cheeses.
Lemon-Honey Vinaigrette:
- Lemon Juice 1/2 cup
- Apple Cider Vinegar 1/4 cup
- Honey 1/4 cup
- Olive Oil 1 cup
- Chopped parsley 2 tablespoons
- Lemon Zest 2 tablespoons
- Salt and Pepper to Taste
Mix together the lemon juice, apple cider vinegar, honey, lemon zest and parsley. Slowly add the olive oil to create an emulsion. Enjoy!

This sounds like a great salad dressing! I imagine the lemon cuts the sweetness of the honey and gives it a more tangy flavor which would be great on any leafy summer salad
I’m going to make this but substitute lime for lemon and cilantro for parsley. Homemade dressing makes a huge difference.

We actually make something very similar to this, for chicken (and fish), as well. I include some fresh thyme or rosemary when used as a marinade.
